Coconut Easter Nests: To Keto or Not to Keto?!

Hi Lovelies! Easter is approaching quickly and I wanted to make a simple dessert in advance. Admittedly, this is the first time that I’ve created Keto Coconut Easter Nests and I will be serving them this weekend – Yay!! I’m hoping, however, that the nests will taste fabulous even after a few days of storage – I don’t know, we’ll see! Stay tuned!!

Ingredients – Makes 18 Nests:

  • 5 Egg Whites
  • 2 TBSPs of Coconut Sugar – I used Grace Coconut Sugar
  • 1-2 Packages (14 Ounces) of unsweetened shredded coconut – I used Cuisine Camino
  • Nut Butter – I used Almond Hazelnut Nuts to You Nut Butter (to taste)
  • Nuts – I used Hazelnuts

Prep:

  1. Preheat your oven to 300 degrees F.
  2. Coat muffin trays (18 cups) with cooking spray, oil or butter. I used an aluminum muffin tin as the nests are easier to remove from the tin.
  3. In a large bowl, combine the egg whites and sugar, then mix in 14 ounces of shredded coconut.
  4. At this point, I exclaimed: “This won’t stick together!!!” lol!

I scooped out ¼ cup of the coconut mixture to put in each muffin tin. I lightly pressed the coconut mixture to the tin sides and bottom and put the tins in the oven for 25 minutes.

After 25 minutes the tops of the nests were browned enough and I placed a large piece of aluminum foil over the muffin tray and set the timer for an additional 10 minutes.

After 35 minutes of total cooking time, I took the trays out of the oven to cool for 10-20 minutes. The nests were easy to remove!! YAY!! I just pushed from the bottom of the tray and the nests could easily be taken out but were still fairly delicate to handle.

I’m bringing the nests to our Easter dinner this weekend along with the Almond Hazelnut Butter, hazelnuts and ice cream!! I’m planning on assembling the dessert on the night of our dinner and storing the nests in the freezer until then. I’m hoping that all goes well!!

  • Peeps and Cadbury’s Mini Eggs – YAY!!
